PRODUCE Dark Jaggery, is as its name suggests a dark golden coloured, unrefined jaggery powder made from organically grown sugarcane. This alternative to refined sugar, is not only heaps healthier but also super delicious. You will see when you open up the bag, that it has a natural texture very different from industrially processed sugars.

How to Use

RECIPE Dark Jaggery Caramel is a cleaner alternative to regular, sugar-based caramels - and much more delicious! start by dissolving grated or chopped dark jaggery in water over medium-low heat until fully dissolved. Once dissolved, increase the heat and let it simmer for about 5 minutes until it thickens. Lower the heat and add butter, stirring until melted, then slowly add heavy cream, continuing to stir to avoid splattering. Simmer for an additional 5-7 minutes until the caramel reaches your desired thickness. Stir in sea salt if desired, and once it cools slightly, transfer to a jar for storage. Use this rich, golden caramel to drizzle over Marie biscuits, ice cream or fruit!

GROWERS Nelamane Collective

ABOUT Our Dark Jaggery is sourced from the Nelamane collective of farmers in Mandya Taluk, Karnataka, who are reviving traditional farming and processing methods. Organically grown sugarcane is harvested every few months, with the pressed juice gently boiled and bubbled in large vats over fire until it reduces to a powdery form. The farmers grow and process their own sugarcane, ensuring consistency across batches. Every 2-3 months, freshly harvested sugarcane is crushed to extract juice, which is then boiled over wood or bagasse fires, producing Chemical-free Organic Jaggery Powder.

CONTEXT As large-scale industries continue to push processed and refined sugars, which are harmful to health, we recognise the immense value of traditional, labour-intensive methods like jaggery production. The entire process requires great effort and skill, and we are proud to support and champion the farmers at Nelamane who are preserving these techniques, offering a healthier, more sustainable alternative to refined sugars.

For the best flavour and freshness, we recommend using our Field & Forest produce within 2 years from the harvest. We source in small batches to ensure that you always receive the freshest produce from the latest harvest.

What is the best way to store these? -

To maintain freshness, store your Field & Forest produce in a cool, dry place, away from direct sunlight - an airtight container in a dark cupboard will keep them at their best.
