How to Use

RECIPE Cardamom Snacking Cake is a fragrant, moist cake that highlights the bright, citrusy flavour of freshly ground green cardamom. Start by grinding seeds from 20 green cardamom pods and mix with flour, salt, baking powder, and baking soda. Combine melted butter, sugar, fresh cream, orange zest to form a creamy batter, then fold in the flour mixture. Pour into a greased pan and bake at 180°C/350°F for 50 minutes, or until golden and springy. Let it cool for 10 minutes before slicing generously—perfect with a cup of coffee!

ABOUT Harsha, Sundara & Ratna are from a tiny village in Sakleshpur, where they have been caring for their ancestral cardamom forest for over 30 years. Their passion for wildlife runs generations deep—they've spent decades observing elephants, gaur, and other animals walking up to the meadows through the swamps on their land, and they have extensive knowledge of the region's diverse plant species. Their commitment to maintaining the forest's biodiversity is at the heart of our partnership.

CONTEXT Our partnership here is unique, as we haven't worked in a forest as dense and wildlife-rich as this one before. Together, we aim to strengthen their ability to resist pressures to convert the forest into more intensive land use—ironically, even coffee cultivation. Through our rainforest conservation agreement, we source cardamom from this forest, encouraging them to keep the native trees standing.

For the best flavour and freshness, we recommend using our Field & Forest produce within 2 years from the harvest. We source in small batches to ensure that you always receive the freshest produce from the latest harvest.

What is the best way to store these? -

To maintain freshness, store your Field & Forest produce in a cool, dry place, away from direct sunlight - an airtight container in a dark cupboard will keep them at their best.
