It is no secret that coffee exists, in large parts because bees do! Ecological research shows that bees, particularly Apis dorsata contribute to at least 20% of the fruit set of coffee, meaning that if there are fewer bees, there is less coffee! It is this ecological connectedness between bees and coffee that led us to our collaboration with Under The Mango Tree!
This Eucalyptus honey comes from beekeepers in Himachal Pradesh who have been important stakeholders in Under The Mango Tree's work for numerous years. For this honey, bee boxes were placed in Eucalyptus plantations. The result is a light and smooth sweetness that pairs seamlessly with most coffees.

Pairing coffee with honey is about accepting that honey does have a distinctive flavour! However, the Eucalyptus Honey is more versatile than others and can be paired even with light roast coffees. We feel most of our coffees would pair with this coffee! If you like Medium or Light roasts, try this with the Wanderoo or Jumping Ant!
