It is no secret that coffee exists, in large parts because bees do! Ecological research shows that bees, particularly Apis dorsata contribute to at least 20% of the fruit set of coffee, meaning that if there are fewer bees, there is less coffee! It is this ecological connectedness between bees and coffee that led us to our collaboration with Under The Mango Tree!
TRIBAL GOLD HONEY
This Tribal Gold honey comes from beekeepers in Gujarat who have been important stakeholders in Under The Mango Tree's work for numerous years. This honey has been sweetened by the nectar of forest flora such as Palash and Mahua as well as tropical trees like Mango, Amla and Cashew. The result is a treacle like sweetness and sharp aftertaste that pairs beautifully with coffee.

If you have followed the honey fiasco, you would know that a recent report by the Centre for Science and Environment found that many of the big honey brands are retailing honey spiked with sugar. Our collaboration with Under The Mango Tree could not come at a better time! As the year winds down, we encourage you to make better choices - not only with your coffee but also the sweetener you add to your brew!

Pairing coffee with honey is about accepting that honey, particularly this Tribal Gold honey does have a distinctive flavour! Our recommendation is to pair this particular honey with a dark roast to add layered flavours and complexity to the brew. Try this with the Loris, Otter, Ficus, Luna or Whistling Schoolboy.
